Recipe: Beetroot Mead

Another strange vegetable wine. I had enough for one gallon wildflower and one gallon clover.

3 lbs wildflower honey
Or
4 lbs clover honey
5 lbs beets boiled about 40 minutes
25 mashed raisins
12 oz pure concord grape juice
Sulfites prior to ferment
Pectic enzyme
Red Star Pasteur Red Yeast

Update 5/11/14:
Racked and tasted. Quite clear. A rich and full red wine that has subtle hints of beet flavor. Interesting to see how this will age.

Update 9/4/14
Added heavy toast oak chips to each. Will bottle after a two week extraction.

Update 9/18/14
Bottled. Yielded five bottles each. The one with clover honey is rather sweet tasting, whereas the wildflower one retained a richer colour and a more complex flavor. I’ll update with tasting notes and such at a later time.
